[Dstar] Understanding DSTAR

Hello
I read that DSTAR interleaves data with voice, but what does it do during a voice TX ?
Does your voice get bundled up and packets of data flow during voice ?
Is the rate fast enough and the protocol good enough to send multiple "voice packets" on teh fly ?
Or does it just open one big packet for the duration the PTT is down ?
Station A ----> Station B <data voice data voice> EOT
or
Station A ----> Station B <data voice data voice>
Station A ----> Station B <data voice data voice>
Station A ----> Station B <data voice data voice>
Station A ----> Station B <data voice data voice> EOT
Spose my question is , what is the payload length and what tells it to be that long ?
What is the delay through a repeater ? Does it decode and re-gen or just pass ?
